How to make Cempedak Pancake
Do you know that it is Cempadak season now? If you go along some kampung roads in Malaysia, you will find cempedak being sold at the roadside stores. You can even see some of the stores selling the mouth watering fried cempedak fruits!
A relative brought me one nice Cempedak yesterday. See what I turned it to be? Cempedak pancake! As Cempedak fruits can be difficult to be chewed and dissolved, Thermomix came in useful for me to blend it at high speed until it got mixed well into the flour!
See my recipe below:
- 220g Cempedak fruits (removed seeds)
- 180g all-purpose flour
- 1 teaspoon baking powder
- 1/4 baking soda
- 1 teaspoon salt
- 1 tablespoon white sugar (optional)
- 1/4 cups milk
- 1 egg
- 10g butter
Before you start, apply some oil onto your hand and knife. As Cempedak can be very very sticky, applying oil will help you clean up your hand and knife easily. Then just cut the skin and remove the fruits.
Remember to remove the seeds as well before you place them into your TM bowl!
|1) Place all Cempedak into Thermomix bowl and grind||Yes||10 sec||10|
|2) Sift together the flour, baking powder, salt into TM bowl. Make a well in the center and pour in the milk, egg and butter; mix until smooth.||Yes||10 sec||6|
|3) Heat a lightly oiled frying pan over medium high heat. Pour or scoop the batter onto the pan, using approximately 1/4 cup for each pancake.|
|Brown on both sides and serve hot.|
It is a nice dessert to make! Turning Cempedak into pancake making it easy for the kids to chewed! If you make this, let me know if you like it!
