Braised Mushroom & Sea Cucumber with Broccoli

I have been enjoying my Chinese New Year meals at my mom’s place and my husband hometown at Kuala Selangor. On the fifth day of CNY, I decided to try out Sea Cucumber braised with mushroom since I have some sea cucumber at hand. I was happy to discover an easy to follow recipe from Justadelish. So I cooked the dish using my Thermomix. Done within 20 mins. I am sure I will cook this dish again next year!

Ingredients

  • 6-10 pieces of fresh mushroomm
  • 250g pre-soaked Sea Cucumber – cut into 1.5 inch pieces
  • 1 inch Ginger (smashed) & 2 Green Onion (white part only) – for blanching
  • 4 slices of Ginger
  • 1 Green Onion (white part only)
  • 1 Broccoli Head (200g) – remove the stem and cut into florets

Sauce

  • 2 tablespoon Premium Oyster Sauce
  • 1 teaspoon Light Soy Sauce
  • 200ml Water
  • 1 teaspoon Cornstarch
  • ¼ teaspoon Sugar

Thermomix Method:

  1. Blanch brocolli florets: Boil 400g of water for 5 mins @ temperature 100c, then place broccoli into TM Bowl for 2 mins with reverse stir mode. Remove broccoli from pot and drain the florets dry immediately.
  2. Add ginger and green onion, sea cucumber into the same pot.  boiling them for 1 minute @ temperature100c reversed stir mode. Drain.
  3. Throw the remaining water from TM pot.  Saute ginger slices and green onion in 1 tablespoon of oil for 2 mins at temperature V at reversed stir mode. Add sea cucumber and mushrooms, stir fry for 1 minute at temperature V at reversed stir mode.
  4. Place water and sauce ingredients to TM pot through the center hole and cook for 10 mins @ temperature varomo at reversed stir mode.
  5. To serve, place mushrooms in the center of a large flat plate, making a circle. Surround mushrooms with broccoli florets and place sea cucumber on top of the mushrooms. Pour warm sauce over the dish and serve immediately.

Traditional Method

  1. Blanch broccoli florets in a small pot of boiling water for 1-2 minute.  Remove broccoli from pot and drain the florets dry immediately.
  2. Add ginger and green onion into the same pot, let it boiling then blanch sea cucumber for 1 minute. Drain.
  3. In another pot, saute ginger slices and green onion in 1 tablespoon of oil. Add sea cucumber and mushrooms, stir fry for 1 minute.
  4. Mix sauce ingredients in a small bowl, add sauce to the pot and cook for about 10 mins or until sauce thickened.
  5. To serve, place mushrooms in the center of a large flat plate, making a circle. Surround mushrooms with broccoli florets and place sea cucumber on top of the mushrooms. Pour warm sauce over the dish and serve immediately
