Braised Pork with Soy Sauce2014-10-08

- 600g pork belly (1-inch wide strips)
- 1 garlic (crushed)
- 20g ginger (sliced)
- 4 dry chillies (soaked)
- 2 stalk spring onion (2-inch wide strips)
- 2 tbsp Shaoxing Chinese Cooking Wine
- 3 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 40g rock sugar
- 1 star anise
- 3-4 hard-boiled eggs (shelled)
- 3 cups of water
Heat up a wok with oil and stir-fry garlic, ginger, dry chillies and Spring Onion till fragrant.
Add in pork belly and stir-fry evenly for 10 minutes over medium heat.Pour in Shaoxing Chinese cooking wine and light soy sauce, continue to stir-fry for another 5 minutes with medium heat.

Pour in water, dark soy sauce, rock sugar and star anise, cook over high heat till boiled, cook in medium heat and braise for 45 minutes.
Add in hard-boiled eggs, reduce to low heat and continue to braise for 15 minutes. Serve hot with rice.
Constantly check the water level to prevent burning.
