How to cook curry chicken with Thermomix in 15 mins

Traditionally, curry is cooked with lots of herbs that need to be smashed or blended with a food processor. Well, with Thermomix, I can blend and cook them immediately without transferring the pot. I can prepare the meal in about 15 mins. That save time and perhaps I would make more curry in future! The recipe is modified from the recipe from Thermomix Malaysia cookbook. Hope you like it too!

Ingredients

Chicken and seasoning

  • 1 whole chicken chopped into bite size pieces
  • 20g curry powder
  • 2 tsp salt
  • 1 tsp sugar

Ingredient A:

  • 20 dried chili
  • 5 red chili
  • 2 cloves garlic
  • 10 pcs shallots
  • 5 pcs buah keras
  • 1/2 inch tumeric
  • 10g galangal
  • 60g cooking oil
  • 20g water

Ingredient B

  • 2 potatoes – cut wedges
  • 2 stalks curry leaves
  • 2 stalks lemon grass (smashed)

Ingredient C

  • 200 ml thick coconut milk

Method

Put ingredient A into Thermomix bowl to grind 10 sec at speed 10

Fry ingredient A until fragrant 6 mins V, speed 1

Add chicken and ingredient B to cook for 30 sec, at V, reversed stir. curry chickenb

Add ingredient C and cook for 30 sec at V, reversed stir.

Ready to serve with rice!
