This mantao is made of 2 layers of color – Purple and Yellow. The colors are made of natural ingredients ie sweet potatoes and plain flour.

Ingredients For Purple Layer

Ingredient A

  • Water 70g
  • Oil 15g
  • Sugar 20g
  • Yeast 1.5 tsp

Ingredient B

  • Steamed Purple Sweet Potato 70g
  • Pau flour 250g
  • 1 pinch of salt

Ingredients For Yellow / White Layer

Ingredient A

  • Water 120g
  • Oil 15g
  • Sugar 20g
  • Yeast 1.5 tsp

  • Pau flour 250g
  • 1 pinch of salt

  1. Place water, oil, sugar and yeast into TM bowl to mix. 30 sec, 37c, and speed 3
  2. Add, Sweet Potato, flour and salt. Knead the dough on interval speed. Time 2min.
  3. Shape dough into ball.
  4. Repeat the same process to make the white layer dough from step 1 to 3.
  5. Once you have the white and purple dough, flatten each dough into oval shaped with the help of a roller. The dough should be of similar size. Stack them up by placing purple layer on top of the white layer. Then roll up the dough from the longer side into long round shape. Then cut them into pieces (approximately 2 cm each)
  6. Set aside in Varoma unit for about 20 mins for it to rise. Pour water into TM bowl to boil, 5 mins later, stack up Varoma unit to steam. Time: 17min, Temp: V, Speed 2

tips

  • You might add in more sweet potato, but you will need to reduce water accordingly. You can put lesser water in step 1, then add more water in step 2 based on hardness of the dough.
