Spaghetti Carbonara (Chinese Inspired Pasta Recipe) Using Thermomix

I pity parents and students who have to retake the UPSR exam paper! There is no fault of them for the leaking of exam paper. Why would people go to the extend of buying exam ‘tips’? If the students can memorize all the answers, they would probably score well if they put in their effort to study… The money should be channeled to somewhere else… like… preparing healthy meals for the kids!

Ok, back to my cooking today…. I tried out Spaghetti Carbonara recipe that I found from the web. I modified the recipe to make it less sticky but yet creamy. Try out, if you like this sort of sauce!

Ingredients

For the sauce:
  • 30g shallots OR white onions
  • 180g bacons or hams or hot dogs cut into pieces
  • 100g crab sticks cut into pieces (optional)
  • 20g Extra virgin olive oil
  • 25g butter, softened (optional)
  • 130g white button mushrooms, sliced
  • 20g flour (optional)
  • 300g fresh milk/ full cream milk
  • 1 egg
  • 1 cup water
  • 100g grated cheddar cheese
  • 40g grated parmesan cheese
  • 2 tsp fresh oregano leaves, chopped into pieces (optional)
  • 2 tsp fresh pasley leaves, chopped into pieces (optional)

For the pasta:

  • 1200 g water
  • 350g spaghetti
  • 10g cooking oil
  • Salt to taste

 

Method

(for the sauce)

  • Place parmesan cheese and cheddar cheese into mixing bowl, grate 10 sec/ speed 9. Transfer to a bowl and set aside.
  • Chop shallots into mixing bowl, chop  (6 secs, speed 6)
  • Add extra virgin oil, hams, hotdogs and crab meats, saute ( 6mins/ Varoma / Speed  1 on Reverse setting). Transfer to a big bowl and set aside.
  • Saute mushroom with butter (5mins-Varoma temp-Speed1 on Reverse setting)
  • Add flour and cook (2 mins/100c/ Speed1 on Reverse setting)
  • Gradually add milk through opening over 2 minutes (2mins/ 100c /Speed1 on Reverse setting)
  • Gradually add lightly beaten egg through opening over 2 minutes (2 mins-Varoma temp-Speed1 on Reverse setting)
  • Add both cheddar and parmesan cheese and water and continue cooking (2 mins-Varoma temp-Speed1 on Reverse Setting)
  • Add fresh oregano and parsley (through opening) and continue cooking (4 mins-Varoma temp-Speed1 on reverse setting)
  • Pour out into mixing bowl containing bacon strips and set aside
    (for the pasta)
  • Place water, salt and oil into Thermomix bowl to cook for 15 mins/ 100c / Speed 1
  • Add pasta to cook 8-10 min/ 100c/ 0.5 reverse setting
  • Drain and serve with the sauce

Tips

Instead of using Chicken stock, can saute sliced chicken breast meat.
