Raisin Custard Buns
The texture of the bread is super soft and fluffy.. It is really nice to eat.. it would be better to dip the bread onto hot drink such as coffee or milo… umm… life is just beautiful just with such simple to make bread!



  • 1 Large Egg Yolk
  • 10 g Fine White Sugar
  • 15 g Bread Flour
  • 70 g Fresh Milk

Dough Ingredient A

  • 5 g Yeast
  • 30 g Fine Sugar
  • 100 g Water
  • 25 g Butter

Dough Ingredient B

  • 250 g High protein flour/高筋面粉
  • 1/2 teaspoon Salt
  • 15 g Milk Powder
  • 30 g raisins

Other ingredients

  • Some chocolate chips (optional)



  • Attach Butterfly, put custard ingredients in TM bowl, 4 minutes at 80 degrees celsius, speed 2
  • When it is done, Add 1 more minute at 90 degrees Speed 2
  • Take out custard and put aside

Dough Making

  • Put Ingredient A in TM bowl for 1 minute 37 degrees celsius speed 2
  • Add ingredient B and custard, knead for 3 minutes. Add raisins through the centre hole when kneading.
  • Wrap dough in plastic wrapper and let it rise for half an hour
  • Knead into 4 ball shapes of equal size. If you like, decorate the dough with some chocolate chips.
  • Put all 4 balls in a square bread tin, and proof until it doubles in size, egg wash and bake for 30 minutes at 180 degrees celsius
